I didn't feel like sifting through multiple pages of the forum to find the original post on this, but I thought you all might be interested in knowing that the video profile on Chif that was done for PBS's "Nova Science Now" will be available for viewing on PBS's website on October 20th. To whetten our appetites for the big event, however, PBS.org has graciously provided a short preview by having "10 Questions with MsChif" www.pbs.org/wgbh/nova/secretlife/I'm looking forward to the 20th. ;D

As I've learned from knowing about homebrewing and from House (I think it was on House) there are multiple bacteria that produce diacetyl, which gives off the butterscotch smell. In beer and wines it's usually not a good thing except for in a few styles; that bacteria is Pediococcus. There is also a strain of Strep that smells like butterscotch due to diacetyl. There is probably more too but that is all I know.

Over on her forum, MsChif answered that it is indeed the strain of Strep that smells like butterscotch that she was referring to... Streptococcus anginosus
